Delightful mini waffle pops topped with chocolate, coconut, and macadamia nuts - perfect for any celebration!
Ingredients:
  • 1.75 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 tablespoon baking powder
  • 1.5 cups milk
  • 3 eggs, beaten
  • 0.5 cup butter, melted
  • 60 lollipop sticks
  • 6 ounces dark chocolate chips
  • 6 ounces white chocolate chips
  • 0.5 cup shredded sweetened coconut
  • 0.5 cup chopped roasted macadamia nuts
Instructions:
  • Follow the manufacturer's instructions to preheat and grease the waffle iron.
  • Combine flour, sugar, baking powder, and salt in a spacious bowl and whisk until well mixed.
  • In a separate bowl, combine milk, eggs, butter, and vanilla extract with a whisk until well blended. Gently fold this mixture into the flour mixture until just moistened.
  • Spoon 2 teaspoons of batter onto the preheated waffle iron for each waffle, making sure to leave space. Insert a lollipop stick about 3/4 of the way into each. Cook until golden and crispy, approximately 1 minute. Place each waffle pop on a cooling rack and continue with the rest of the batter.
  • Melt dark chocolate chips in the microwave in short intervals, stirring frequently, until smooth, for about 1 to 3 minutes. Use a pastry bag with a writing tip or a plastic bag with a corner cut to drizzle the melted chocolate over one side of each waffle pop.
  • Melt white chocolate chips in a microwave-safe bowl in 15-second intervals, stirring well, for 1 to 3 minutes. Pour the melted white chocolate into a pastry bag with a small writing tip or a plastic bag with the corner snipped; drizzle over the dark chocolate.
  • Sprinkle coconut and macadamia nuts over the melted chocolate and gently press to help toppings adhere while chocolate sets.
