Whimsical mini waffle pops with white chocolate, coconut, and candied ginger - perfect for birthday celebrations.
Ingredients:
  • 60 lollipop sticks
  • 1.75 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1.5 cups milk
  • 3 eggs, beaten
  • 0.5 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 (12 ounce) package white chocolate chips
  • 0.5 cup shredded sweetened coconut
  • 0.5 cup minced candied ginger
Instructions:
  • Preheat and lightly grease a waffle iron following the manufacturer's guidelines.
  • Combine the flour, sugar, baking powder, and salt in a large bowl and whisk until well mixed.
  • Combine milk, eggs, butter, and vanilla extract, then gently mix into the flour mixture until just combined.
  • Ladle 2 teaspoons of batter onto the preheated waffle iron for each waffle, making sure to leave some space. Insert a lollipop stick about 3/4 of the way into each pool of batter, then close the lid. Cook until golden and crispy, approximately 1 minute. Place each waffle pop on a cooling rack and continue with the rest of the batter.
  • Melt white chocolate in the microwave, stirring every 15 seconds, until smooth, for about 1 to 3 minutes. Transfer the melted white chocolate to a pastry bag with a small writing tip or a resealable plastic bag with a corner cut off. Drizzle over each waffle pop.
  • Enhance the melted chocolate on each waffle pop by generously sprinkling coconut and candied ginger, gently pressing them down to ensure they adhere as the chocolate sets.
