Mint Julep Ice Cream

Indulge in a refreshing twist on the Southern mint julep with homemade bourbon mint ice cream.
Ingredients:
  • 2 ounces of mint leaves (spearmint)
  • 1 1/2 cups of milk
  • 1 1/2 cups of cream
  • 6 egg yolks, whisked together
  • 3/4 cup of sugar
  • 1/4 teaspoon of kosher salt
  • 1/4 cup of bourbon
Instructions:
  • Infuse the mint in hot cream: Gently crush the leaves to unlock their aromatic oils. Combine with milk and 3/4 cup of cream in a saucepan. Heat until almost simmering, then let it sit covered for 30 minutes to steep.
  • Set up an ice bath by filling a large bowl with ice water. Place a bowl with the remaining cream in it and a fine mesh sieve over the cream. In a separate bowl, whisk the egg yolks.
  • Strain the mint cream, discard the mint leaves, add sugar and salt. Heat gently until steamy, not boiling.
  • Slowly whisk a portion of the warm milk mixture into the egg yolks to temper them, ensuring they blend smoothly. Combine the egg yolk mixture back into the saucepan.
  • Thicken the mixture: Stir constantly over medium heat with a wooden spoon, scraping the bottom of the pan. The mixture is ready when it coats the back of the spoon thickly enough for your finger to leave a clean trail when swiped across. This should take 3 to 10 minutes, depending on your burner's heat.
  • Pour the mixture through the sieve into the chilled cream, then stir in the bourbon and vanilla. Cover and refrigerate until chilled, for 6 hours to overnight.
  • Churn in an ice cream maker following the manufacturer's guidance.
  • Freeze to firm up: Store the ice cream in an airtight container in the freezer for a few hours until it hardens slightly. The ice cream may be soft right after churning and needs some time to achieve the perfect texture. If it becomes too firm, simply let it sit for a few minutes before scooping.
