Mint Oreo™ Cookies and Cream Cupcakes

Indulgent mint cookies and cream cupcakes made with Betty Crocker™ Super Moist™ chocolate cake mix.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Milk Chocolate Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 package (15.25 oz) Oreo chocolate mint creme sandwich cookies
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar
Instructions:
  • Preheat your oven to 350°F and line 27 regular-size muffin cups with paper baking cups.
  • Prepare the cake mix according to the instructions on the box by incorporating water, oil, and eggs. Roughly chop cookies. Set aside 1 cup of the chopped cookies for decoration. Carefully fold the rest of the chopped cookies into the batter. Distribute the batter evenly into muffin cups.
  • Bake for 18 to 23 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then transfer from the pans to cooling racks until completely cooled.
  • In a medium bowl, use an electric mixer to blend cream cheese and butter until creamy. Gradually add powdered sugar, beating on low speed until frosting is smooth. Frost cupcakes and top with crushed cookies.
