Indulge in mint meringues, topped with vibrant candy sprinkles for a sophisticated treat.
Ingredients:
  • 2 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 1/2 cup sugar
  • 1/4 teaspoon mint extract
  • 3 to 5 drops green food color
  • Betty Crocker™ multicolored candy sprinkles, if desired
Instructions:
  • Preheat oven to 200°F and grease 2 large cookie sheets with shortening or cooking spray. In a small bowl, use an electric mixer to beat egg whites, cream of tartar, and salt until foamy. Gradually add sugar while mixing on high speed until sugar is dissolved, the meringue is glossy, and stiff peaks form. Mix in mint extract. Gently fold in food color, one drop at a time, until thoroughly blended and desired color is achieved.
  • Prepare a disposable decorating bag or a gallon-size food storage plastic bag by cutting a 1/2-inch hole in one bottom corner. Optionally, insert a large star tip into the decorating bag or into the hole of the plastic bag. Fill the bag with meringue, twist the top to seal, and pipe 1-inch puffs onto cookie sheets. Finish by sprinkling each puff with candy sprinkles.
  • After baking on the middle oven rack for 2 hours, promptly transfer the cookies from the sheets to wire racks. Allow them to cool fully, approximately 5 minutes.
