Impress guests with mint-swirl lollipop cookies made from Betty Crocker® sugar cookie mix for a stunning treat.
Ingredients:
  • 2 pouches (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 2 eggs, slightly beaten
  • 1/4 teaspoon mint extract
  • 1/4 teaspoon Betty Crocker™ red or green gel food color
  • Coarse white sparkling sugar
  • 20 paper lollipop sticks
Instructions:
  • Preheat oven to 375°F. Combine cookie mix, butter, flour, eggs, and mint extract in a large bowl. Mix with a spoon until a soft dough forms. Divide the dough in half. Roll out one portion between two sheets of waxed paper into a 13x10 1/2-inch rectangle. Peel off the top sheet of waxed paper.
  • Color the remaining half of the dough by adding food coloring and mixing until evenly colored. Shape the colored dough into a ball. Roll it between two sheets of waxed paper to form a 13x10 1/2-inch rectangle. Remove the top sheet of waxed paper, then flip the colored dough onto the plain dough. Peel off the top sheet of waxed paper. Trim the dough into an 11x9-inch rectangle. Roll the dough tightly into a log, starting from the long side and using the bottom sheet of waxed paper as a guide.
  • Coat cookie log generously with coarse sugar, then slice into 1/2-inch pieces. Arrange slices on an ungreased cookie sheet, leaving 2 inches of space between each slice.
  • Bake for 8-10 minutes until the edges are lightly browned. Insert a lollipop stick halfway into each cookie right after baking. Use a spatula to transfer the cookies from the sheet to a cooling rack. Let them cool completely for about 20 minutes.
