Ingredients:
  • 150ml chicken style liquid stock
  • 150g couscous
  • 36.40 gm light olive oil
  • 1 large brown onion, finely chopped
  • 2.50 gm Middle Eastern spice
  • 400g (2 med) potato, cooked, mashed
  • 1 egg, lightly beaten
  • 125.00 ml mint leaves, firmly packed, chopped
  • Extra light olive oil
  • 4 rashers streaky bacon
  • 1 avocado, mashed
  • 21.00 gm fresh lime juice
  • 37.60 gm light sour cream
  • Pinch cayenne pepper
Instructions:
  • Heat the stock in a saucepan until boiling. Remove from heat and add couscous. Cover and let sit for 3 minutes. Fluff the couscous with a fork to separate the grains.
  • In a pan over medium heat, sauté onions until soft, about 5 minutes. Stir in spices and cook for 1 minute. Mix the onion mixture with potato, couscous, egg, and fresh mint. Season generously with salt and pepper.
  • Divide the mixture into 8 portions and shape each into an 8cm patty.
  • Heat a thin layer of oil in a pan over medium heat. Sear patties for 3 minutes on each side.
  • In the same pan, crisp up the bacon, then drain. Mix guacamole ingredients in a small bowl and season with salt. Serve patties topped with crispy bacon and guacamole.
