Delicious miso-marinated salmon and bok choy broiled to perfection for a quick and flavorful dish.
Ingredients:
  • 0.5 cup miso
  • 0.33333334326744 cup mirin (Japanese sweet rice wine)
  • 0.25 cup sake (Japanese rice wine)
  • 3 tablespoons firmly packed brown sugar
  • 2 tablespoons soy sauce
  • 1.5 pounds salmon fillets
  • 2 heads baby bok choy, halved lengthwise, or more to taste
Instructions:
  • Mix together the miso, mirin, sake, brown sugar, and soy sauce in a shallow dish. Add the salmon fillets and coat them thoroughly. Let them marinate at room temperature for 10 to 15 minutes, or in the fridge for up to 2 days.
  • Place oven rack in optimal position, approximately 6 inches below heat source, and preheat broiler in oven.
  • Cover a baking sheet with shiny aluminum foil for easy cleanup. Gently place the fillets on the prepared baking sheet, keeping the marinade aside for later use.
  • Coat bok choy in the flavorful marinade and place it next to the salmon on the baking sheet, while keeping the marinade aside for later use.
  • Broil salmon and bok choy in the preheated oven until salmon is lightly charred on the edges, about 4 minutes. Flip salmon and veggies, brush with reserved marinade, and continue cooking until salmon is browned and flakes easily with a fork, about 3 minutes more. Transfer salmon to serving plates. Keep cooking bok choy until tender-crisp, 3 to 4 minutes more.
