Delicious Mississippi mud cookies with coconut, oats, and nuts, inspired by Mississippi mud ice cream.
Ingredients:
  • 2 cups white sugar
  • 0.5 cup butter
  • 0.5 cup milk
  • 3 cups rolled oats
  • 6 tablespoons unsweetened cocoa powder
  • 0.5 cup chopped walnuts
  • 0.5 cup flaked coconut
  • 1 teaspoon vanilla extract
Instructions:
  • In a large saucepan, bring sugar, butter, and milk to a rolling boil. Let it bubble joyfully for 2 minutes, then take off the heat.
  • Blend in rich cocoa and aromatic vanilla. Fold in hearty oats, crunchy walnuts, and sweet coconut until thoroughly mixed.
  • Spoon out dollops onto waxed paper and let cool for 30 minutes before enjoying.
