Ingredients:
  • 600g mixed frozen berries
  • 220g caster sugar
  • 1 vanilla bean, split lengthways, seeds scraped
  • 40.00 ml creme de cassis (optional)
  • 2 eggwhites
Instructions:
  • Combine the berries, sugar, and vanilla pod and seeds in a saucepan over gentle heat, stirring until the sugar melts completely.
  • Raise the heat to medium-low and simmer for 4 minutes until slightly thickened. After cooling for 10 minutes, gently mix in the creme de cassis.
  • Transfer the mixture into a plastic container and freeze for 3 hours or until the edges start to firm up. Blend the sorbet in a food processor to break up the ice crystals, then return to the container and freeze for an additional 2 hours.
  • Combine sorbet and eggwhites in a food processor until smooth. Transfer mixture back to container and freeze for 3-4 hours until firm. Scoop and serve.
