Indulge in irresistible espresso vanilla cookies made with Bisquick® mix for a delightful dessert!
Ingredients:
  • 1 egg
  • 1 tablespoon instant espresso coffee or coffee crystals (dry)
  • 1 teaspoon hot water
  • 1/2 cup packed brown sugar
  • 3 tablespoons butter or margarine, softened
  • 1/2 teaspoon vanilla
  • 1 3/4 cups Original Bisquick™ mix
  • 1/4 cup miniature semisweet chocolate chips
Instructions:
  • - Preheat oven to 350°F. - Mix instant coffee with hot water until dissolved. - In a large bowl, use an electric mixer on medium speed to blend brown sugar, butter, vanilla, egg, and coffee for about 1 minute. - Stir in the rest of the ingredients. - Place dough on a surface dusted with Bisquick mix and roll gently to coat. - Divide dough in half and shape each half into a 10x3-inch rectangle on an ungreased cookie sheet.
  • Bake for 20 to 25 minutes until cracked and deeply browned around edges. Allow to cool on the cookie sheet for 10 minutes. Slice each rectangle crosswise into 1/2-inch slices, then carefully flip each slice cut side down on the cookie sheet.
  • Bake for 8 to 10 minutes until crispy and golden brown around the edges. Let cool on the cookie sheet for 5 minutes, then transfer to a wire rack. Allow to cool completely, about 25 minutes.
