Indulge in rich chocolate and coffee cheesecake bars made with Gold Medal® flour – a decadent treat.
Ingredients:
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 2 cups old-fashioned oats
  • 1 cup packed brown sugar
  • 1 cup butter or margarine, softened
  • 1 teaspoon instant coffee granules (dry)
  • 1/2 teaspoon baking soda
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 tablespoon baking cocoa
  • 3 eggs
  • 3/4 cup miniature semisweet chocolate chips
Instructions:
  • Preheat oven to 350°. Grease a 15 1/2x10 1/2x1 inch jelly roll pan with shortening or cooking spray. Combine flour, oats, brown sugar, butter, 1 teaspoon of dry coffee, salt, and baking soda in a large bowl. Use an electric mixer or mix by hand until crumbly. Press about 4 cups of the mixture into the pan, saving the rest for later.
  • Blend the rest of the ingredients, excluding chocolate chips, in a large bowl using an electric mixer until well combined. Gently fold in 1/2 cup of the chocolate chips. Spread this mixture over the crust. Mix the remaining 1/4 cup chocolate chips into the remaining crumb mixture. Sprinkle this over the cream cheese mixture and lightly press it down.
  • Bake for 32 to 40 minutes until the center is set and the topping is lightly golden. Let it cool for 30 minutes, then refrigerate for at least 3 hours until chilled. Cut into 8 rows by 6 rows to make bars and store them covered in the refrigerator.
