Indulge your guests with decadent mocha-caramel cookies.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup unsweetened baking cocoa
  • 4 teaspoons instant espresso coffee powder or granules
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine, softened
  • 1 1/3 cups bittersweet chocolate chips
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 bag (11 oz) caramel baking bits
Instructions:
  • Preheat your oven to 325°F. In a medium bowl, combine flour, cocoa, coffee powder, baking soda, and salt; set aside.
  • In a large microwave-safe bowl, heat butter and 2/3 cup of chocolate chips uncovered on High for about 1 minute, stirring once, until melted. Add sugar, eggs, and vanilla and mix until well combined. Stir in the flour mixture until just blended (dough will be thick). Gently fold in the remaining 2/3 cup of chocolate chips and the baking bits.
  • Spoon dough onto ungreased cookie sheet in 2-tablespoon portions, spacing them 2 inches apart. Bake for 15 minutes until edges are set and small cracks appear on the surface. Let cool for 5 minutes, then transfer to a cooling rack.
