Moist Potato Chocolate Cake

Decadent chocolate cake made moist with mashed potato, topped with luscious chocolate cream cheese frosting.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 (1 ounce) squares bittersweet chocolate, chopped
  • 0.5 cup butter
  • 1.5 cups white sugar
  • 2 eggs, room temperature
  • 0.75 cup mashed potatoes
  • 0.33333334326744 cup milk, room temperature
Instructions:
  • Preheat the oven to 350°F (175°C) and prep two 8-inch round cake pans with grease and flour.
  • Combine flour, cocoa powder, baking powder, and salt by sifting; set aside. Microwave bittersweet chocolate in a cup or small bowl, stirring every 15 seconds, until smooth. Warm mashed potatoes in the microwave until room temperature (or cool freshly mashed potatoes).
  • Using an electric mixer, beat butter and sugar in a large bowl until light and fluffy. Add room-temperature eggs one at a time, allowing each to blend in before adding the next. Mix in mashed potatoes and melted chocolate. Alternate adding flour mixture and milk, mixing until just combined. Pour batter into prepared pans, smoothing the surface as needed.
  • Bake in the preheated oven for 25-30 minutes until a knife inserted into the center of the cake comes out clean. Then cool the cakes in the pans on a wire rack.
