Unique and delightful cookies with a moist and surprising twist, easy and enjoyable to bake.
Ingredients:
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup butter
  • 0.25 cup white sugar
  • 1.5 teaspoons grated lemon zest
  • 0.25 teaspoon ground nutmeg
  • 0.25 cup honey
  • 1 egg
  • 1 cup grated raw sweet potato
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and sift together the flour, baking powder, baking soda, and salt in a bowl; set aside.
  • Cream together smooth butter and sugar in a large bowl. Mix in lemon zest, honey, nutmeg, and egg until well combined, then stir in sweet potato. Gently fold in flour until just mixed. Roll tablespoons of dough into balls and place 2 inches apart on ungreased baking sheets.
  • Bake in the preheated oven for 7 minutes, or until the edges are lightly browned. Cool the cookies on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
