Moist, spiced whole wheat muffins - perfect for breakfast or a wholesome snack.
Ingredients:
  • 0.5 cup butter, softened
  • 2 eggs
  • 0.5 cup molasses
  • 1 cup whole wheat flour
  • 2 tablespoons powdered buttermilk
  • 0.5 cup water
  • 0.5 cup raisins
Instructions:
  • Preheat the oven to 350°F (175°C). Prepare a 12-cup muffin tin by lining with paper liners or greasing generously with cooking spray.
  • Cream butter and sugar until light and fluffy in a large bowl. Add eggs one at a time, mixing well after each addition. Stir in molasses. Combine whole wheat flour, all-purpose flour, cinnamon, ginger, baking soda, and powdered buttermilk; alternately stir into the molasses mixture with water. Fold in raisins. Spoon batter into prepared muffin cups.
  • Bake for 20 to 25 minutes in the preheated oven until the muffin tops spring back when lightly pressed. Let cool in the pan for 10 minutes before transferring to cooling racks.
