Savory beef chili with tomatoes and two types of beans, a comforting must-have for colder seasons.
Ingredients:
  • 3 tablespoons vegetable oil, divided
  • 2 medium bell peppers, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 2 pounds ground beef
  • 2 (16 ounce) cans crushed tomatoes
  • 2 cups beef broth
  • 0.25 cup chili powder
  • 3 tablespoons tomato paste
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.25 teaspoon cayenne pepper
  • 1 (16 ounce) can red kidney beans, drained
  • 1 (16 ounce) can black beans, drained
Instructions:
  • Heat a large frying pan over medium-high heat for 45 seconds. Add 1 tablespoon of oil followed by peppers and onion. Saute for about 6 minutes until soft. Add garlic and saute for another 2 minutes until fragrant. Transfer the mixture to a large soup pot and set aside.
  • Turn up the heat to high and let the frying pan get very hot for about 90 seconds. Add 1 tablespoon of oil, then cook 1/2 of the ground beef in the hot skillet, stirring occasionally until browned and crumbly, which takes about 6 minutes. Transfer the cooked beef to the soup pot, and dispose of any excess grease from the frying pan. Repeat the process with the remaining oil and beef.
  • Combine tomatoes, broth, chili powder, tomato paste, cumin, oregano, salt, and cayenne pepper with the beef; bring to a lively boil over medium-high heat. Reduce heat and let simmer for 45 minutes, stirring occasionally.
  • Add kidney beans and black beans and simmer until the beans are heated through, approximately 15 minutes.
