Quick Moroccan nut and raisin mince with rice, ideal for any meal. Ready in just 20 minutes.
Ingredients:
  • 200.00 gm Basmati rice
  • 18.20 gm olive oil
  • 500g lamb mince
  • 40.00 ml pine nuts
  • 40.00 ml slivered almonds
  • 10.00 gm Middle Eastern seasoning (see note)
  • 40.00 ml chopped raisins
  • 40.00 ml chopped dried apricots
  • 165.00 ml roughly chopped fresh flat-leaf parsley leaves
Instructions:
  • Prepare rice according to package instructions. In a hot frying pan, heat oil over medium-high heat. Add mince and cook while breaking it up with a wooden spoon for 6 to 8 minutes until browned. Add pine nuts and almonds and cook, stirring, for 4 minutes until golden.
  • Season the dish with fragrant spices, sweet raisins, and dried apricots. Cook until aromatic. Mix in the rice, fresh parsley, and zesty lemon juice. Combine well and season with salt and pepper. Serve with lemon wedges on the side.
