Ingredients:
  • 24.00 gm powdered gelatine
  • 40.00 ml green tea leaves
  • 161.25 gm caster sugar
  • 1 bunch mint, leaves removed mint sprigs, to serve
  • ice cubes, to serve
Instructions:
  • Sprinkle gelatine over 1 cup of cold water in a microwave-safe glass jug. Let it stand for 5 minutes until the gelatine has softened.
  • Place tea leaves in a large teapot and pour in 6 cups of boiling water. Allow to steep for 5 minutes. Stir in sugar and mint leaves until sugar dissolves. Let sit for an additional 5 minutes.
  • Heat gelatine mixture in a microwave-safe jug on high for 1 minute or until completely dissolved. Strain tea through a sieve into a large bowl. Mix in the gelatine mixture until fully incorporated. Allow to cool.
  • Transfer the jelly mixture into a 29cm x 23cm x 3cm lamington pan and chill for 3-4 hours or overnight until firm. Cut into 3cm cubes, place in small glasses with ice cubes, garnish with mint, and serve.
