Cozy up with a satisfying shepherd's pie - the ultimate one-dish meal for a chilly Wednesday evening.
Ingredients:
  • 800g Sebago potatoes, peeled, quartered
  • 40.00 gm butter
  • 128.75 gm milk
  • 1 onion, finely chopped
  • 500g beef mince
  • 2 carrots, peeled, diced
  • 255.00 gm vegetable liquid stock
  • 40.00 ml harissa spice blend
  • 20.00 ml plain flour
  • 300g can chickpeas, rinsed, drained
  • 1 zucchini, diced
  • 125.00 ml frozen peas
  • 40.00 ml grated parmesan cheese
Instructions:
  • 1. Preheat the oven to 200°C and grease an 8-cup capacity ovenproof dish. 2. Boil potatoes in a saucepan for 15 minutes until tender, then drain. 3. Mash the potatoes with butter and milk until smooth. 4. Season with salt and pepper to taste.
  • In a hot frying pan, sauté garlic and onion in oil for 2 minutes. Add mince and cook for 5 to 7 minutes until browned. Stir in carrots, stock, harissa, and flour. Simmer until the mixture thickens, about 10 minutes.
  • Add tender chickpeas, fresh zucchini, and sweet peas to the savory mince mixture. Sauté for 2 minutes, stirring occasionally, until all ingredients are well combined. Take off the heat.
  • Spread the mixture in the dish and generously layer with creamy mashed potatoes and savory parmesan cheese. Bake until piping hot, typically about 20 to 30 minutes. Serve and enjoy the irresistible flavors!
