Delicious appetizer with buffalo mozzarella, figs, lemon dressing, and fresh mint.
Ingredients:
  • 1 (8 ounce) package buffalo mozzarella, thinly sliced
  • 1 lemon, juiced
  • 1 pinch salt and freshly ground black pepper to taste
  • 1 clove garlic, crushed
  • 8 small fresh black figs, halved lengthwise
  • 4 leaves fresh mint, finely chopped
Instructions:
  • In a resealable plastic bag, mix mozzarella cheese with olive oil, lemon juice, garlic, salt, and pepper. Seal and refrigerate for 2 hours, occasionally turning the mozzarella in the marinade.
  • Lay out mozzarella and figs beautifully on a plate. Drizzle with marinade and garnish with fresh mint.
