Mud Slide Ice Cream Cake

Create a simple frozen treat inspired by the classic mocha beverage.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Chocolate Fudge Cake Mix
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 2 tablespoons milk
  • 2 tablespoons coffee-flavored liqueur or strong coffee
  • 4 cups vanilla ice cream
  • 1 tub (12 oz) Betty Crocker™ Whipped Chocolate Frosting
  • 2 tablespoons coffee-flavored liqueur, if desired
Instructions:
  • Preheat your oven to 350°F (325°F for dark or nonstick pan). Grease the bottom of a 13x9-inch pan. In a large bowl, combine cake mix, melted butter, egg, and milk until smooth. Spread the batter in the pan evenly.
  • Bake for 16 to 18 minutes until the center is set and the top looks dry and cracked. Allow to cool completely, around 1 hour.
  • Drizzle 2 tablespoons of liqueur over the cake. Allow the ice cream to sit at room temperature for approximately 15 minutes to soften. Spread the softened ice cream on top of the cake. Freeze for about 3 hours until it is firm.
  • Combine frosting with 2 tablespoons of liqueur in a medium bowl, then generously spread over the ice cream. Freeze for a minimum of 1 hour and store covered in the freezer.
