Muesli florentines

Delicious tea-time indulgence.
Ingredients:
  • 500.00 ml toasted fruit muesli (see note)
  • 125.00 ml chopped red glace cherries
  • 212.85 gm sweetened condensed milk
  • 200g dark chocolate, chopped
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Line 2 baking trays with baking paper for easy cleanup.
  • Combine muesli, cherries, and milk in a large bowl. Mix well.
  • Spoon mixture onto trays, 5cm apart. Flatten into 8cm rounds using a small spatula. Bake until dark golden, 10 to 12 minutes. Allow to cool on trays.
  • Place the chocolate in a microwave-safe bowl and heat on high for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until melted and smooth. Allow the melted chocolate to cool and thicken for 2 to 3 minutes before using.
  • Spread the chocolate over the base of the florentines using a spatula. Place them chocolate-side up on a wire rack and set aside until the chocolate has set. Serve.
