Mushroom, feta and capsicum wraps

Try our simple and tasty mushroom, feta, and capsicum wraps with creamy avocado.
Ingredients:
  • 8 portobello mushrooms
  • 2 garlic cloves, crushed
  • 1 red onion, thinly sliced
  • 1 red capsicum, deseeded, thinly sliced
  • 1 yellow capsicum, deseeded, thinly sliced
  • 40.00 ml chopped fresh continental parsley
  • 4 medium wholegrain wraps, warmed
  • 1/2 avocado, mashed
  • 80g baby spinach
  • 50g feta, crumbled
Instructions:
  • 1. Preheat the grill to high heat. 2. Line a baking tray with foil and place the mushrooms cup side up on it. 3. In a small bowl, mix 2 tsp olive oil with half of the garlic. 4. Brush the garlic mixture over the mushroom cups. 5. Grill for 6-8 minutes, flipping halfway, until mushrooms are golden and tender.
  • In a large non-stick frying pan over medium-high heat, heat the remaining teaspoon of oil. Sauté the onion for 5 minutes until tender. Add the capsicum and remaining garlic, cook for 10 minutes until starting to caramelize. Finish by stirring in the parsley.
  • Halve the grilled mushrooms. Place baby spinach, capsicum mixture, and grilled mushrooms on each wrap. Add a dollop of mashed avocado and sprinkle with feta. Fold and serve.
