Intensely flavorful flat mushrooms paired with prosciutto and cheese create gourmet burgers with a meaty texture.
Ingredients:
  • 60ml olive oil
  • 2 red onions, sliced
  • 125.00 ml semi-dried tomatoes, cut into strips
  • 62.50 ml torn basil leaves
  • 4 large flat mushrooms
  • 8 slices prosciutto, rind removed
  • 200g Taleggio cheese*, thinly sliced
  • 4 round crusty bread rolls (preferably wood-fired), halved
  • 40.00 gm pesto
  • 250.00 ml baby rocket leaves
Instructions:
  • Preheat your oven to 160°C for the perfect baking temperature.
  • In a saucepan, gently cook onions in oil until soft and caramelized, about 10-15 minutes. Add semi-dried tomatoes and basil, then stir well.
  • On a greased baking tray, arrange mushrooms and spoon over the onion mixture. Crumple prosciutto on top of each mushroom, then add a slice of cheese. Bake for 15 minutes until golden.
  • Spread a generous layer of savory pesto on the base of the rolls, then evenly distribute the fresh rocket leaves on top of the pesto. Finish by adding the indulgently cheesy mushrooms on top. Serve with crispy oven fries and a side of green salad, if desired.
