Delicious Mushroom Caviar: Sautéed mushrooms, shallots, garlic, and white wine mixed with sour cream, pine nuts, lemon juice, and parsley for a quick and easy appetizer.
Ingredients:
  • 3 Tbsp butter
  • 1/2 pound cremini mushrooms, wiped clean and finely chopped (or pulsed a few times in a food processor)
  • Salt and pepper
  • 1/2 cup of minced shallots
  • 1 Tbsp dry white wine (e.g. Sauvignon Blanc) optional
  • 1 garlic clove, minced
  • 2 Tbsp pine nuts
  • 2 Tbsp sour cream
  • 2 teaspoons lemon juice
  • 1 Tbsp chopped parsley
  • A couple dashes of cayenne pepper, to taste
Instructions:
  • In a large skillet over high heat, melt butter. Add mushrooms and shallots. Sauté for 5 minutes, stirring often. Season with salt and pepper. Add garlic and white wine (if using). Cook for another minute and remove from heat.
  • Toast the pine nuts in a hot skillet until golden brown, stirring often to prevent burning. Transfer to a bowl once toasted and set aside.
  • Combine the cooled mushrooms with toasted pine nuts, sour cream, lemon juice, and parsley. Season with salt, pepper, and cayenne to taste. Chill, then serve on a butter lettuce leaf with crackers (rice crackers for gluten-free).
