Impress your guests with elegant caramelized onion and mushroom crostini.
Ingredients:
  • 1 (8-inch) baguette, cut into 12 1/2-inch slices
  • 3 tablespoons extra virgin olive oil, plus more for brushing
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon kosher salt, divided
  • 2 medium (3 cups) yellow onion, sliced 1/4-inch thick
  • 8 ounces cremini or baby bella mushrooms, sliced 1/4-inch thick
  • 2 teaspoons minced garlic
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon soy sauce
  • 1/4 teaspoon black pepper, plus more for garnish
  • 4 ounces goat cheese
  • 1 tablespoon sliced chives, plus more for garnish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
Instructions:
  • Preheat the oven by positioning the rack in the middle and setting it to 350ºF.
  • Coat bread slices with 2 tablespoons of olive oil using a pastry brush. Place in a single layer on a baking sheet and bake in the oven until dry, lightly browned, and crisp, around 10 minutes. Remember to flip the bread halfway through baking. Let cool on the sheet before serving.
  • Create caramelized onions: Start by heating a large skillet over medium-high heat. Mix in 1 tablespoon of olive oil, butter, brown sugar, and 1/4 teaspoon salt. Toss in the onions and ensure they are coated. Stir occasionally until the onions soften and turn golden brown, approximately 5 minutes. Lower the heat to medium and continue cooking the onions, stirring regularly, until they caramelize for 10 to 12 minutes.
  • Sauté the mushrooms: Cook sliced mushrooms until tender, stirring often for about 5 minutes. Add garlic, sauté until fragrant, about 30 seconds. Stir in balsamic vinegar, soy sauce, 1/4 teaspoon salt, and black pepper. Sauté for 1 more minute. Adjust seasoning to taste with salt and pepper. Set aside.
  • Prepare the cheese spread by mixing goat cheese, chives, garlic powder, and onion powder in a medium bowl. Refrigerate if not using right away.
  • Prepare the crostini by spreading a generous layer of the goat cheese mixture on each piece of toasted bread. Add a generous spoonful of the caramelized onion and mushroom mixture on top.
