Indulgent mushroom sauce with earthy mushrooms, shallots, beef broth, red wine, and thyme. Perfect for make-ahead meals.
Ingredients:
  • 0.25 cup butter
  • 2 cups fresh sliced mushrooms
  • 1 tablespoon shallots, minced
  • 0.5 cup chopped mushrooms
  • 0.25 cup red wine
  • 0.5 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups beef broth
  • 1 tablespoon arrowroot powder
  • salt to taste
  • freshly ground black pepper
Instructions:
  • In a medium pan over medium heat, melt 1/4 cup butter until sizzling. Add 2 cups sliced mushrooms and sauté until tender. Set aside cooked mushrooms.
  • Melt 1 tablespoon of butter in the pan, then sauté shallots until translucent. Add ½ cup of chopped mushrooms and cook until soft. Mix in red wine, thyme, and bay leaf; let simmer until the sauce slightly thickens, approximately 1 minute.
  • Combine arrowroot with 1/4 cup of cold beef broth until fully dissolved. Pour the rest of the broth into the saucepan and bring it to a boil. Whisk in the arrowroot mixture until the sauce thickens, then add the reserved mushrooms. Season with salt and freshly ground black pepper to taste.
