Succulent mussels in creamy curry sauce - a delightfully simple and exquisite dish.
Ingredients:
  • 0.5 cup minced shallots
  • 1.5 cups dry white wine
  • 1 cup heavy cream
  • 1 teaspoon curry powder
  • 32 mussels - cleaned and debearded
  • 0.25 cup butter
  • 0.25 cup minced parsley
  • 0.25 cup chopped green onions
Instructions:
  • In a large saucepan, sauté shallots and garlic in simmering wine until they turn translucent.
  • Add cream and curry powder to the pan, stirring until heated through. Introduce mussels, cover, and steam until shells open. Using a slotted spoon, transfer mussels to a bowl, leaving sauce behind. Remove any unopened mussels.
  • Incorporate butter into the creamy sauce, then turn off the heat before adding parsley and green onions. Serve promptly.
