Indulgent mac and cheese with Cheddar, leeks, and bacon, topped with golden bubbly Dijon mustard.
Ingredients:
  • 0.5 (8 ounce) package Cheddar cheese, or to taste
  • 4 slices back bacon
  • 1 (8 ounce) package elbow macaroni
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 pint milk
  • 2 teaspoons Dijon mustard (such as Maille Dijon Originale®)
  • salt and freshly ground black pepper to taste
  • 1 leek, trimmed and cut into thin rings
Instructions:
  • Grate half of the Cheddar cheese and dice the remaining half.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until it is evenly browned and crispy, for approximately 10 minutes. Place the cooked bacon on paper towels to drain.
  • Preheat your oven to 375°F (190°C) for the perfect baking temperature.
  • To make perfect elbow macaroni, start by bringing a generously salted pot of water to a boil. Add the macaroni and cook until al dente, about 8 minutes. Drain and enjoy!
  • In a saucepan over medium-low heat, melt butter. Stir in flour and cook for 1 minute. Gradually pour in milk and cook until sauce thickens, about 6 minutes. Add grated Cheddar cheese and Dijon mustard, then season with salt and pepper. Finally, stir in cubed Cheddar cheese and leek rings.
  • Pour the flavorful sauce into the pot of al dente macaroni and mix thoroughly. Transfer the heavenly mixture into a baking pan.
  • Bake in the preheated oven for 20 minutes until bubbly and golden. Sprinkle bacon over the top.
