Delight your loved ones with this flavorful chicken Parmesan made with juicy chicken tenderloins, pasta, marinara sauce, and gooey melted cheese.
Ingredients:
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon ground cayenne pepper
  • 6 chicken breast tenderloins
  • 1 tablespoon half-and-half
  • 1 cup seasoned bread crumbs
  • 0.5 cup panko bread crumbs
  • 1 tablespoon minced fresh flat-leaf parsley
  • 2 tablespoons olive oil
  • 3 quarts water
  • 1 tablespoon salt
  • 6 ounces angel hair pasta
  • 1.5 cups prepared marinara sauce, divided
  • 3 ounces shredded Italian cheese blend
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly grease a large baking dish.
  • In a resealable plastic bag, mix flour, 1/2 teaspoon salt, garlic powder, black pepper, and cayenne pepper. Add chicken tenderloins, seal the bag, and shake to coat them evenly.
  • In a shallow bowl, whisk together egg and half-and-half until well combined. In another shallow bowl, combine bread crumbs, Parmesan cheese, and parsley. Dip floured chicken tenderloins into the egg mixture, allowing excess to drip off, then coat with bread crumb mixture. Place breaded chicken on a plate and let it sit to set the coating for about 10 minutes.
  • In a large skillet over medium heat, sizzle chicken in olive oil until perfectly cooked through with a golden-brown crust, about 5 minutes each side. Use an instant-read thermometer to ensure it reaches 165 degrees F (74 degrees C).
  • In a large pot, bring water and 1 tablespoon of salt to a boil. Add angel hair pasta and cook for about 5 minutes, stirring occasionally, until tender. Drain the pasta.
  • Spread 3/4 cup marinara sauce in the baking dish, layer with cooked pasta, then drizzle the remaining 3/4 cup sauce over the pasta. Place chicken tenderloins on top and generously sprinkle with Italian cheese blend.
  • Bake until the cheese is gooey and bubbling in the preheated oven, approximately 10 minutes.
