Succulent vegetable-studded meatloaf perfect for delicious leftovers.
Ingredients:
  • 1 pound ground turkey
  • 1 pound ground pork
  • 1 tablespoon cooking oil
  • 1 carrot, minced
  • 0.5 red bell pepper, minced
  • 0.5 onion, minced
  • 0.33333334326744 cup thawed frozen chopped spinach
  • 0.5 cup bread crumbs
  • 0.5 cup wheat germ
  • 2 eggs, room temperature
  • 2 tablespoons ketchup
  • 2 teaspoons salt
  • 1 tablespoon honey
  • 1 tablespoon ketchup
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and gracefully line a baking sheet with aluminum foil.
  • Allow the ground turkey and ground pork to come to room temperature for easier mixing.
  • In a skillet over medium heat, sauté the carrot, bell pepper, onion, garlic, and spinach in the oil until softened; allow to cool.
  • Combine the turkey, pork, bread crumbs, wheat germ, eggs, 2 tablespoons ketchup, salt, and pepper in a large bowl. Mix in the vegetable mixture until well combined, then shape into a loaf and place on the baking sheet.
  • Combine the honey and 1 tablespoon of ketchup in a small bowl, then generously spread the mixture over the meatloaf.
  • Roast in the oven until fully cooked, about 60 to 70 minutes. Transfer to a serving platter and let it rest for 5 minutes before slicing.
