Savory ground beef and rice stuffed green peppers, topped with melty mozzarella cheese - a delicious baked side dish.
Ingredients:
  • 2.5 cups water
  • 1 cup brown rice
  • 1 teaspoon olive oil, or as needed
  • 6 large green bell peppers, halved and seeded
  • 1.5 pounds lean ground beef
  • 1 onion, diced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cayenne pepper
  • 2 cups finely shredded mozzarella cheese
Instructions:
  • In a saucepan, bring 2 1/2 cups of water to a boil. Add rice and stir. Cover, reduce heat, and simmer for 20 minutes until the rice is tender.
  • Preheat your oven to 350°F (175°C), then generously drizzle olive oil in a 9x13-inch casserole dish.
  • Boil water in a saucepan and cook green bell peppers for 3 minutes. Then, cool peppers in a bowl of ice water before transferring them to the casserole dish.
  • Preheat a large skillet over medium-high heat. Brown the beef until crumbly, about 5 to 7 minutes; drain any excess grease. Add onion and cooked rice to the skillet with the beef. Pour in tomato sauce and mix everything together.
  • Combine garlic, coriander, cumin, cayenne pepper, salt, and black pepper with ground beef. Let simmer for 10 minutes for flavors to meld. Fill each bell pepper half with 2 to 3 tablespoons of the beef mixture. Top with mozzarella cheese and cover with foil in a casserole dish.
  • Bake in the preheated oven for 15 minutes. Then, uncover and bake until the cheese is hot and melted, approximately 15 minutes more.
