Delicious and untested member recipe.
Ingredients:
  • 1.5 kg lamb roast
  • 10 garlic cloves
  • 50g Vegemite
  • 5g rosemary leaves
  • Olive oil
  • 10g minced garlic (or to taste)
Instructions:
  • Preheat your oven or BBQ to 220°C.
  • Drizzle enough olive oil to lightly coat the tray. Scatter rosemary leaves all over and spoon a generous amount of minced garlic in the center.
  • Position the baking rack in the center of the tray.
  • Slice the garlic cloves into slivers. Cut open the lamb and stuff the garlic slivers into the incisions.
  • Massage the vegemite onto the lamb, being careful to avoid the skin.
  • Lay the lamb roast on the baking rack and generously drizzle with oil.
  • Generously scatter additional fragrant rosemary over the succulent lamb.
  • Reduce the oven/BBQ temperature to 190C/180C fan-forced.
  • Roast in the oven, rotating every 30 minutes until fully cooked.
  • "Roast for a flavorful 2 hours."
  • After cooking, remove the lamb from the oven or BBQ, cover it, and let it rest for 20 minutes before carving.
