Delicious zucchini bread recipe to make two loaves using extra zucchinis.
Ingredients:
  • 1.75 cups all-purpose flour
  • 1.5 cups whole wheat flour
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 4 eggs, lightly beaten
  • 1 cup vegetable oil
  • 1 tablespoon lemon juice
  • 3 cups shredded zucchini, squeezed dry
Instructions:
  • Heat your oven to 325°F (165°C).
  • Combine the flours, sugars, baking soda, nutmeg, cinnamon, and salt in a large bowl. Gently incorporate vanilla, eggs, vegetable oil, lemon juice, and zucchini one by one using a rubber spatula. Transfer the batter evenly into two loaf pans.
  • Bake in the preheated oven for 65-75 minutes until a toothpick inserted in the center comes out clean. Then cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
