Make irresistible beef nachos for the kids in no time!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 can (11 oz) whole kernel corn with red and green peppers, drained
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained
  • 8 oz Mexican prepared cheese product (from 16-oz loaf), cut into cubes
  • 6 oz nacho-flavored tortilla chips (about 64 chips)
Instructions:
  • In a 10-inch skillet, sauté the beef over medium-high heat for 5 to 7 minutes, stirring often, until cooked through; then drain any excess fat.
  • Turn down the heat to medium and combine the corn and tomatoes with the beef in the skillet. Cook until everything is heated through and reaches your preferred thickness, stirring occasionally.
  • In a small microwavable bowl, heat cheese cubes and 2 teaspoons water uncovered on High for 15 seconds; stir and continue microwaving in 15-second intervals until the cheese is melted and smooth.
  • Distribute tortilla chips evenly on 6 plates. Spoon beef mixture over the chips and drizzle with melted cheese. Add a sprinkle of fresh cilantro for extra flavor, if desired.
