Kid-friendly nacho casserole with seasoned beef, corn, tortilla chips, and gooey Colby cheese layers.
Ingredients:
  • 1 pound ground beef
  • 1.5 cups chunky salsa
  • 1 (10 ounce) can whole kernel corn, drained
  • 0.75 cup creamy salad dressing (e.g. Miracle Whip)
  • 1 teaspoon chili powder
  • 2 cups crushed tortilla chips
  • 2 cups Colby cheese
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Brown and crumble ground beef in a large skillet over medium-high heat for 5 to 7 minutes. Drain excess fat.
  • Combine salsa, corn, salad dressing, and chili powder in the skillet, stirring until fully incorporated.
  • Spread half of the ground beef mixture evenly in a 2-quart casserole dish, then sprinkle half of the tortilla chips and cheese on top. Repeat layers one more time.
  • Place in a preheated oven and bake until cheese is melted and dish is heated through, approximately 20 minutes.
