Nacho Tater Tot Casserole: A delicious mashup of Tater Tots™ potatoes and nachos, layered with refried beans, ground beef, salsa, and cheese. Customizable toppings for a fun and satisfying crowd-pleaser!
Ingredients:
  • 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 1 lb lean (at least 80%) ground beef
  • 1 cup chopped onions
  • 1 medium jalapeño chile, seeded, finely chopped
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
  • 2 cups shredded Cheddar cheese (8 oz)
  • 1 bag (32 oz) Ore-Ida™ Tater Tots™ frozen potatoes
  • 1/2 cup pickled sliced jalapeño chiles
  • 1 can (2.25 oz) sliced ripe olives, drained
  • 1/2 cup sliced green onions
  • 1 cup sour cream
Instructions:
  • Preheat oven to 400°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray. Evenly spread refried beans on the bottom of the dish.
  • Cook the beef, onions, and jalapeño chile in a 12-inch nonstick skillet over medium-high heat for 7 to 9 minutes, stirring frequently until the beef is browned. Drain, then return to the skillet. Add taco seasoning mix and tomatoes, and cook until heated through, stirring occasionally.
  • Place the savory beef mixture over the beans, generously sprinkle 1 cup of cheese on top, and finish off by layering the frozen potatoes.
  • Bake for 35-40 minutes until heated through and potatoes are golden brown. Sprinkle with the remaining 1 cup of cheese and bake for an additional 3-4 minutes until cheese is melted. Allow it to stand for 10 minutes, then top with pickled jalapeños, olives, and green onions. Serve with a dollop of sour cream.
