Elevate your party with Tater Tots nachos.
Ingredients:
  • 1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
  • 1 pound lean ground beef
  • 0.75 cup water
  • 1 (1 ounce) packet taco seasoning mix
  • 1 cup shredded Mexican cheese blend
  • 1 cup shredded pepperjack cheese
  • 0.5 lime, juiced
  • 1 tomato, chopped
  • 0.5 cup chopped black olives
  • 0.5 cup fresh jalapeno pepper slices
  • 1 avocado - peeled, pitted, and cut into chunks
  • 0.25 cup chopped scallions
  • 0.25 cup chopped cilantro
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and lay out the potato nuggets on a baking sheet.
  • Bake in the oven until nuggets are golden brown and crispy, about 22-24 minutes.
  • In a sizzling skillet, brown and break apart the beef for 5 to 7 minutes. Stir in water and taco seasoning, bring to a boil, then simmer on low until the liquid reduces, around 5 minutes.
  • Preheat the broiler with the oven rack positioned 6 inches from the heat. Place potato nuggets on an oven-proof platter, top with ground beef, Mexican cheese, and pepperjack cheese.
  • Place potato nuggets under the broiler until the cheese is gooey and bubbly, about 1 to 3 minutes. In a bowl, combine sour cream and lime juice to make a zesty dressing. Top the potato nuggets with tomatoes, black olives, jalapenos, avocado, the sour cream mixture, scallions, and cilantro in that order for a burst of flavors and textures.
