Loaded crispy potato nachos: a delicious twist on a classic favorite!
Ingredients:
  • 1 (32 ounce) package frozen tater tots
  • 8 ounces lean ground turkey
  • 0.5 cup salsa
  • 2 teaspoons Mexican seasoning blend
  • 1.5 cups shredded reduced-fat Mexican cheese blend
  • 0.5 cup diced tomatoes
  • 0.33333334326744 cup diced bell pepper
  • 0.33333334326744 cup sliced ripe olives
  • 0.5 cup sliced green onions
  • Light sour cream
  • Guacamole
  • Salsa
  • Chopped fresh cilantro
Instructions:
  • Preheat your oven to 425 degrees F. Spread the tater tots in a single layer on a large baking sheet. Bake for 30 minutes or until golden brown and perfectly crisp, remembering to give them a stir halfway through cooking.
  • While the tater tots are baking, brown ground turkey in a large skillet over medium heat until fully cooked. Add salsa and seasoning and cook for a few more minutes.
  • Arrange tater tots in an inviting mound on the baking sheet and sprinkle with half of the cheese. Top with the flavorful turkey mixture. Sprinkle the remaining cheese, then layer on the tomatoes, bell pepper, and olives for a burst of color and flavor.
  • Continue cooking for an additional 10 minutes, or until the cheese is nice and melted. Garnish with fresh green onions and serve with any additional toppings of your choice.
