Tex-Mex inspired bite-sized canapés offer a neat twist on classic nachos.
Ingredients:
  • 1 avocado, halved, stone removed, peeled, coarsely chopped
  • 20.00 ml finely chopped red onion
  • 10.60 gm fresh lime juice
  • 24 White Corn Dippas Original corn chips
  • 260g (1 cup) refried beans with chilli
  • 125g (1/2 cup) light sour cream
  • 6 cherry tomatoes, cut crossways into 24 slices
  • Fresh coriander leaves, to serve
Instructions:
  • Mix together the ripe avocado, diced onion, and fresh lime juice in a small bowl. Season generously with salt and pepper to taste.
  • Lay out the corn chips on a serving platter. Spoon 2 teaspoons of refried beans onto each chip, spreading to the edges. Add 1 teaspoon of the avocado mixture, 1 teaspoon of sour cream, a slice of tomato, and a coriander leaf onto each chip. Serve and enjoy!
