Irresistible nectarine upside-down cake with buttery brown sugar glaze - a delicious twist on the classic!
Ingredients:
  • 3 tablespoons butter, at room temperature
  • 0.25 cup brown sugar (such as muscovado)
  • 4 fresh nectarines, sliced into bite-size pieces
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.75 teaspoon salt
  • 11 tablespoons unsalted butter, at room temperature
  • 2 large eggs
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 340 degrees F (170 degrees C. Melt butter in a 9-inch round cake pan in the preheating oven.
  • Sprinkle an even layer of brown sugar over the melted butter in the pan, then arrange the nectarine pieces on top.
  • Whisk flour, baking powder, and salt together in a bowl until combined. In a separate bowl, cream together unsalted butter and white sugar until smooth; then mix in eggs one at a time. Stir in vanilla extract. Gently combine flour mixture into the butter mixture until just combined. Spread the batter over the nectarine layer.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Bake the cake in the preheated oven for 35 to 40 minutes until it's golden brown and a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan on a wire rack for 15 minutes, then run a knife around the edge and invert onto a serving plate. Enjoy warm or at room temperature.
