Cornstarch stabilizes meringue for perfect results every time.
Ingredients:
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 0.5 cup boiling water
  • 3 egg whites
  • 6 tablespoons white sugar
  • 1 pinch salt
Instructions:
  • In a saucepan, whisk together cornstarch and cold water until smooth. Pour in boiling water and cook until the mixture thickens and becomes clear. Allow it to cool completely before using.
  • Whisk egg whites until frothy, then gradually mix in sugar until stiff peaks form. Add salt, vanilla, and slowly incorporate cold cornstarch mixture. Beat mixture briskly for a few minutes. Spread meringue over filled, cooled 9-inch pie.
  • Bake the pie at 350°F (175°C) until the meringue tips turn golden brown, about 10 minutes.
