Indulgent cheesecake with buttery shortbread crust - the ultimate recipe you'll never need another!
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.33333334326744 cup white sugar
  • 1 egg, beaten
  • 0.5 cup butter, softened
  • 2.5 pounds cream cheese, softened
  • 1.75 cups white sugar
  • 5 eggs
  • 2 egg yolks
  • 0.25 cup heavy whipping cream
Instructions:
  • Preheat your oven to 400°F (200°C) and lightly grease a 10-inch springform pan with cooking spray. Consider using a 9x13-inch pan as an alternative.
  • For the crust: Mix 1 1/2 cups flour, 1/3 cup sugar, 1 egg, and 1/2 cup butter or margarine. Press mixture to cover the pan. Poke holes with a fork and bake at 400°F (200°C) for 15 minutes. Let it cool before using.
  • Preheat the oven to a high 475 degrees F (245 degrees C). In a large bowl, thoroughly combine cream cheese, 1 3/4 cups sugar, 3 tablespoons flour, 5 eggs, and yolks. Gently stir in cream, mixing just until combined.
  • Spread the filling over the crust, bake at 475 degrees F (245 degrees C) for 10 minutes. Lower the temperature to 200 degrees F (95 degrees C) and bake for an additional hour. Turn off the oven and let the cake sit inside for another hour. It's normal if the center looks slightly jiggly.
  • Refrigerate overnight, ensuring maximum flavor development. For extra flair, add your preferred fruit toppings or enjoy as is.
