New-Fashioned Banana Cream Pie

Banana cream pie topped with graham cracker crumbs.
Ingredients:
  • 1/4 cup cornstarch
  • 1/3 cup sugar
  • 2 cups vanilla soymilk
  • 2 egg yolks
  • 1 tablespoon butter or trans-fat-free margarine
  • 8 squares cinnamon- or chocolate-flavored graham crackers, crushed (1/2 cup)
  • 1 ripe medium banana, thinly sliced
  • 1 cup frozen (thawed) fat-free whipped topping
  • Caramel or chocolate fat-free topping, if desired
Instructions:
  • In a 2-quart stainless steel or nonstick saucepan (avoid aluminum to prevent discoloration), combine cornstarch and sugar. Slowly whisk in soymilk and egg yolks. Bring mixture to a boil over medium heat, constantly stirring. Let it boil for 1 minute while stirring continuously. Remove from heat and mix in vanilla and butter. Cover the pudding's surface with plastic wrap to prevent a skin from forming. Chill in the refrigerator for about 30 minutes until cool.
  • Start by generously layering 1 tablespoon of cracker crumbs on the bottom of 4 small shallow serving bowls. Mix the pudding well. Next, carefully distribute 1/4 cup of pudding over the cracker crumbs in each bowl and layer with 1/4 of the banana slices. Add another 1/4 cup of pudding over the banana slices, followed by 1/4 cup of whipped topping and an additional 1 tablespoon of cracker crumbs on top. Finish by drizzling with topping before serving.
