Delicious tuna dishes for all ages!
Ingredients:
  • 10 chat potatoes
  • 175g baby green beans, trimmed
  • 2 x 185g cans tuna in oil, drained, flaked
  • 3 green onions, thinly sliced
  • 40.00 ml plain flour
  • 56.88 gm olive oil
  • 3 medium tomatoes
  • 2 Lebanese cucumbers, diced
  • 8 butter lettuce leaves
  • 82.50 ml kalamata olives
  • 2 hard-boiled eggs, halved
  • 30.00 ml baby capers, rinsed
  • 82.50 ml flat-leaf parsley leaves, chopped
  • 42.00 gm lemon juice
Instructions:
  • 1. Place potatoes in a saucepan and cover with cold water. 2. Bring to a boil over high heat, then reduce to medium heat and cook uncovered for 12 minutes until tender. 3. Transfer the potatoes to a colander, refresh under cold water, and drain before transferring them to a bowl. 4. Add beans to the boiling water and cook for 2 minutes. 5. Drain the beans, refresh under cold water, and drain again before using.
  • Quarter the potatoes, wedge the tomatoes, tear the lettuce, and place them in a bowl with olives, cucumber, tuna, and onion. Gently toss to combine. Divide between plates and top with egg. Heat oil in a pan over medium heat, add capers, parsley, lemon juice, salt, and pepper. Drizzle over the salad and serve.
