Garbanzo beans and oats replace tuna in this delicious 'no-tuna' salad, ideal for sandwiches or crackers.
Ingredients:
  • 0.5 cup chopped dill pickles
  • 2 stalks celery, chopped
  • 3 tablespoons chopped onion
  • 2 tablespoons dill pickle juice
  • 1 (15 ounce) can chickpeas (garbanzo beans), drained and rinsed
  • 0.5 cup rolled oats
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
Instructions:
  • In a food processor, blend pickles, celery, onion, pickle juice until evenly chopped. Add chickpeas and pulse until beans are roughly chopped. Transfer mixture to a bowl.
  • Combine oats with chickpea mixture, ensuring they are thoroughly incorporated. Mix in mayonnaise and mustard, stirring until fully combined. Allow it to rest for 10 minutes to meld the flavors together.
