Banana bread cereal bites with dates - a delicious and convenient snack option!
Ingredients:
  • 1 cup Cheerios™ + Ancient Grains cereal
  • 1 cup pitted dates, packed
  • 1/2 cup chopped walnuts
  • Water
  • 1 1/2 cups quick-cooking oats
  • 1/2 ripe banana, mashed (about 1/4 cup)
  • 1 tablespoon chia seed
Instructions:
  • Grease 24 mini muffin cups with coconut oil or cooking spray. Set aside cereal in a large bowl. In a food processor, pulse dates, walnuts, and 1 tablespoon of water until finely chopped in 1-second bursts for about 30 seconds. Add oats, banana, and chia seeds; process until mixture forms a ball.
  • Pour the date mixture into the cereal bowl. Lightly coat your hands with cooking spray and use them to mix the ingredients together. Press the mixture firmly into each muffin cup, using your fingers to compact it evenly until firm.
  • Chill in the refrigerator for approximately 1 hour until solid. Can be stored covered in the fridge for up to 1 week.
