Vibrant vegan bean salad recipe - versatile and delicious, perfect for experimenting with flavors.
Ingredients:
  • 1 (15 ounce) can garbanzo beans (chickpeas), drained and rinsed
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can green beans, drained and rinsed
  • 1 stalk celery, sliced
  • 0.5 cup cider vinegar
  • 0.25 cup vegetable oil
  • 1 tablespoon honey
  • 0.5 teaspoon ground dry mustard
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon ground cayenne pepper
Instructions:
  • Combine garbanzo beans, kidney beans, green beans, green onions, and celery in a bowl. In a separate bowl, whisk together vinegar, oil, honey, mustard, garlic powder, black pepper, onion powder, and cayenne pepper to make the dressing. Drizzle the dressing over the salad and gently mix to coat. Chill in the fridge for at least 2 hours before serving. Give it a light toss before enjoying.
