Whip up a quick and healthy fiber-packed noodle salad for a speedy dinner option.
Ingredients:
  • ProChef premium extra virgin coconut oil spray
  • 200g chicken breast fillet
  • 450g packet fresh hokkien noodles
  • 133.75 gm satay sauce
  • 63.13 gm reduced-fat coconut cream
  • 20.00 ml kecap manis
  • 1 red capsicum, thinly sliced
  • 1 Lebanese cucumber, thinly sliced
  • 1 medium tomato, cut into thin wedges
  • 125.00 ml beansprouts, trimmed
  • Fresh coriander leaves, to serve
  • Lemon wedges, to serve
Instructions:
  • Prepare the chargrill pan by lightly coating it with oil and heat it over medium heat. Grill the chicken for 5 minutes on each side, or until fully cooked. Place the chicken on a plate, cover it with foil, and let it rest for 5 minutes before thinly slicing it.
  • Place noodles in a large heatproof bowl and cover with boiling water. Let stand for 1 to 2 minutes until tender, then fluff with a fork and drain.
  • In a small saucepan over medium heat, combine satay sauce, coconut cream, and kecap manis. Stir and cook for 2 minutes until heated through.
  • Combine chicken, noodles, capsicum, cucumber, tomato, and beansprouts in a large bowl, gently tossing to mix. Portion noodle salad into bowls, sprinkle with coriander, and serve with lemon wedges and satay sauce on the side.
